For most of the U.K. the hot summer continued and we all sweltered as it was just about the hottest August on record. Often it was a job to sleep as nights, as well as days were exceptionally warm. At least we can all say we have had an amazing summer this year and were all able to benefit by spending a lot of time outdoors. For once as a nation, we could not complain about the lack of a summer! One thing that I particularly enjoyed was not having to take a coat or even a cardigan when going out for the day. Most of us forgot where we kept the umbrellas and eating “al fresco” most days became the norm in our house hold. The heatwave was good for the country’s economy as many families decided on a “staycation” this year, instead of booking package deals abroad.
I started to work on a new cook book this month and have enjoyed the concept as it will be a book to share with my peers. Food in a Flash for Silver Surfers, it is a book of easy to cook, healthy recipes.
By the time we are ready to retire, hopefully, the kids have flown the nest and most people have reached that time in their lives when they have the luxury of a little more time on their hands to enjoy cooking. We probably also benefit by having the cash to indulge in a few expensive ingredients to make the evening meal that extra bit special.
Usually now cooking for my husband Malcolm and myself most evenings, I feel that recipes to serve 2 is a good idea. Hope you agree? The recipes in the book are therefore, in the main part, designed to feed two people. They will be healthy, colourful and varied and include a few interesting and different recipes from abroad. At the back of the book there will be 4 dinner party menus, each to serve 6 people. These are for when seniors want to invite company over. They can turn to this section happy in the knowledge, that by following the “Entertaining Menus,” they will be serving their guests a meal that is easy to prepare and cook, is bang up to date and appealing as well as being nutritionally well balanced.
For this month’s recipes I am including a recipe for delicious gooey chocolate brownies, a chicken and chorizo tray bake and a delicious salad that is somewhat unusual. Enjoy!
