Spiced Red Cabbage

This delicious vegeatable dish is a tasty way to use up any red cabbage you might have left in the fridge. Excellent with chicken and roast meats.
3/4 red cabbage, core removed, shredded
1 large red onion, chopped
2 Tsps. Allspice
1 large Bramley apple, peeled, cored and sliced
12 cherry tomatoes, halved
300ml dry cider
50g soft light brown sugar
Salt and pepper
In a large saucepan, fry the onion in the melted butter, for 5-7 minutes, stirring frequently, until softened.
Add all remaining ingredients to the pan. Bring to the boil. Cover with a lid and simmer for one hour. Remove lid and continue to cook for 15 minutes.
