Avocado, Pea and Mint Salad

Serves: 4-6

A very pretty, healthy salad that is a little bit different.  Avocados are a real super food.  They contain fibre and, would you believe, more than 20 vitamins and minerals as well as the type of fat that is good for you. Peas add protein, fibre, and plenty of vibrant colour to the side dish.

Toss the avocado in lemon juice, as soon as you have prepared it, to prevent it discolouring.

Zest and juice 1 lemon

1 large, ripe avocado

200g frozen peas

150g small courgettes

2 Tbsp. olive oil

1 Tbsp. freshly chopped mint

About 10 cherry tomatoes, halved

Salt and pepper

  • Top and tail the courgettes, then using a vegetable peeler, cut the courgettes into ribbons, lengthways.  Transfer to a large salad bowl.
  • Add the lemon zest.
  • Peel, stone and slice the avocado.  Sprinkle with juice from half the lemon.  Set aside.
  • Blanch the peas.  Put them in a sieve, in the sink.  Pour over a kettle full of boiling water.
  • Rinse with cold water, until cold.  Drain well.
  • Add peas to the salad bowl.
  • When ready to serve, add tomatoes to the salad bowl.  Add olive oil, mint and remaining lemon juice.  Add a seasoning of salt and pepper.  Toss everything together.  Add prepared avocado and serve immediately.
