Ingredients
2 large fillets haddock, from fishmonger, if possible
15g butter
Salt and pepper
1/2 Tsp sweet paprika
40g grated Cheddar cheese
25g mixed nuts, such as peanuts, hazelnuts and Brazil nuts, chopped
2 small tomatoes, sliced
Spray oil
Method
1. Pre heat air fryer to 190 C.
2. Add haddock fillets, skin down to lightly oiled basket. Use oiled base plate if you have one.
3. Add butter, dividing it between the fish, evenly. Season with salt and pepper.
4. Air fry for about 7-8 minutes, until no longer opaque.
5. Combine cheese, nuts and paprika and divide between the fish. Add slices of tomato.
6. Spray each fillet with 3 sprays of oil.
7. Continue to air fry for 3-4 minutes until cheese is melted and golden. Using a fish slice, carefully transfer haddock to warmed serving dish.
8. Serve with a tossed mixed salad and crusty bread.
