This recipe was tested in an air fryer with a capacity of 5.5litres and an
output of 1,800 Watts.
Spray light is readily available in all leading supermarkets. 1 spray of spray
oil = 1 kilocalorie.
Cut 1 red pepper and 1 yellow pepper in half, through the stem, to form 4
boats. Remove core and seeds and discard. In a medium size mixing bowl,
combine 2 chopped tomatoes, with 1 diced courgette, a tablespoon chopped
parsley, 2 chopped red spring onions and a seasoning of salt and pepper. Add
6 sprays of spray light oil. Mix to combine. Divide filling equally between the 4
pepper halves. Carefully place prepared peppers in the basket of your air fryer
and cook for 5 minutes at 200C. Top with a tablespoon grated Parmesan
cheese, evenly distributed and continue to air Fry for 4 minutes. Serve.
