This delicious vegetable dish is quick and easy to cook in your air fryer. There is no need to peel the squash. Serves 2-3.
Ingredients
1 small butternut squash, de-seeded and cut into chunks 1 red pepper, de seeded and roughly chopped
1 green chilli, de- seeded and chopped
1 Tbsp freshly chopped herbs or 1 Tsp dried
3 Tsps sunflower oil
Salt and black pepper
Method
1. Pre- heat air fryer to 200C.
2. In a large mixing bowl, combine the vegetables. Add chilli and herbs.
3. Add oil and a seasoning of salt and pepper.
4. Toss to coat. Turn into air fryer basket.
5. Air fry for 18-20 minutes, shaking or stirring every 6 minutes, until vegetables are soft and lightly charred.
6. Serve hot, or allow to cook and add to a salad.
